Hot Honey Ground Beef Bowls are high-protein, fiber-rich, and loaded with bold flavors from roasted sweet potato, seasoned beef, cottage cheese, and creamy avocado, all finished with a spicy-sweet drizzle of hot honey. Perfect for a quick, nourishing meal.
Ingredients
1 1/2 lbs sweet potato (680 g), peeled and diced
Salt, pepper, cinnamon to taste
1 lb 93/7 lean ground beef
1 tbsp tomato paste (16 g)
1 tbsp taco seasoning
2 cups 2% low fat cottage cheese (452 g)
4 small avocados (400 g)
2 tbsp hot honey (42 g)
Instructions
1. Preheat oven to 425F and line a half baking sheet with parchment.
2. Add diced sweet potatoes, spray lightly, season with salt, pepper, and cinnamon. Bake 30 minutes, flipping halfway.
3. Brown ground beef in frying pan over medium-high. Drain excess liquid.
4. Stir in tomato paste, taco seasoning, and a splash of water. Cook 1-2 minutes more, then remove from heat.
5. Assemble bowls: layer sweet potato, taco beef, cottage cheese, avocado. Drizzle hot honey on top.
6. Serve immediately and enjoy!
