Description
A creamy, healthy, and high-protein twist on classic chicken salad, made with blended Cottage Cheese Chicken Salad instead of mayo.
Ingredients
1.25 lb cooked chicken breast, shredded or chopped
1 cup cottage cheese
2 tbsp lemon juice
1 tbsp dijon mustard
1/2 tsp maple syrup
2 tbsp fresh dill, finely chopped
3 tbsp scallions, thinly sliced
1 rib celery, finely diced
1/8 tsp salt (more to taste)
1/4 tsp black pepper (more to taste)
1/2 tsp garlic powder
Instructions
1. Blend cottage cheese until smooth using an immersion blender.
2. In a bowl, combine the blended cottage cheese with lemon juice, dijon, maple syrup, dill, scallions, celery, and spices.
3. Add the chicken to the bowl and mix well until fully coated.
4. Chill for 20–30 minutes for best flavor, then serve.
5. Store leftovers in a sealed container in the fridge for up to 3 days.
Notes
You can leave the cottage cheese unblended if you prefer curds.
Add nuts like chopped almonds or walnuts for extra crunch.
Use rotisserie chicken for faster prep.
