Ingredients
1 medium sweet potato, cubed
100g lean ground beef (90/10)
1/2 cup low-fat cottage cheese
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and chili flakes to taste
1 tsp olive oil
Instructions
1. Preheat oven to 400°F (200°C).
2. Toss sweet potato cubes in olive oil, paprika, and salt.
3. Roast on baking sheet for 25 minutes or until golden.
4. In a skillet, cook ground beef with garlic and onion powder.
5. Season with salt, chili flakes, and optional Worcestershire sauce.
6. Layer roasted sweet potatoes in a bowl.
7. Top with hot ground beef.
8. Add a generous spoon of cottage cheese.
9. Garnish with herbs or toppings as desired.
Notes
You can swap beef with ground turkey or shredded chicken.
For a spicy version, stir in chipotle paste.
